Vegan Peanut Butter Cookies

Did you know that you could make delicious vegan peanut butter cookies with only 4 ingredients? Better yet, did you know these 4 ingredients would create one of your favorite vegan desserts? If you didn't know, now you do and you can do something about it! This is one of the easiest vegan recipes in my repertoire and I'm so excited to share these delectable delights with you. Out of all of my vegan cookies recipes, this one is definitely one of my favorites. Keep reading to learn how to make these soft and moist vegan peanut butter cookies. 1st you'll need 2 basic ingredients, flour and sugar. I use all purpose flour and coconut palm sugar; coconut palm sugar has a very distinct sweet taste and has a lower glycemic index than your average refined sugar. However, if you don't have coconut palm sugar, feel free to use any sugar that will suit your sweet tooth.

2nd, you'll need an egg substitute to ensure that the cookie dough all sticks together. Think of this like the glue that holds everything together. I use Bob's Red Mill Egg Replacer because it has a perfect sticky texture that is achieved by mixing it with water. You can also use a flax egg or maybe a mashed banana; however, I haven't tried those two and don't know how they impact flavor. You can get this egg replacer at Sprouts, Whole Foods or any other vegan friendly store.

Lastly, of course you will need smooth and creamy peanut butter. Because peanut butter is the star, make sure you go with a peanut butter that you enjoy thoroughly. You can use something as basic as Jif or your personal favorite organic peanut butter. The most important thing is that you don't get crunchy peanut butter.

When you mix all of the ingredients together, your cookie dough should stick together and be sort of play-dough like. If it needs to stick more, feel free to add a bit more of your egg substitute.

Once your dough is ready, roll the dough into small balls that look like this. Place them about one and a half inches a part on a baking sheet lined with parchment paper or covered in a thin layer of oil.

To get the classic peanut butter cookie criss cross shape, lightly press down onto your cookies with a fork in one direction and then do it again in another direction.

Once they are all pressed down and ready to go, place them in the oven and allow the heat to do it's magic.
